Our BBQ story began like most, on a Weber Kettle. We used to grill for our family now we grill and smoke food for yours.
Our ASAP Competition BBQ Team is comprised of our family and my sister Joyce's family. Also included are more sisters, cousins, nieces, nephews, friends and friends of friends.
While watching a Food Network show on BBQ competitions, we all said it looked like fun and decided we should try it. Our first BBQ competition was in September of 2006 where we had 9 Weber Kettles. The booth space looked so good, we took first place in appearance! That's it. The next year, we repeated the same performance - a trophy for Best Booth Appearance but no BBQ trophies.
We then went to judging schools and BBQ Cooking Classes. We studied the cooking processes and temperatures of the meat as it cooks. We practiced cooking meats so much that the kids asked for vegetables!
We had rub and sauce tastings, to see what we liked and came up with our own ASAP Sauce and ASAP Rub. We purchased our first 2 Backwoods Smokers and we started winning at the competitions.
My favorite competition story is when we competed against the "big" guys, the ones I'd see on TV, or read their books. While they came in their RVs and big rigs, we pulled a u-haul and put up a tent. There were 127 teams participating. It was so exciting just to be there. We ended the event with 20th place in Pulled Pork, 1st place in Brisket and 18th overall. What a blessing it was for us to win a USA Brisket Championship!
What I learned being on the ASAP BBQ team is that everyone on the team is important. We have people that load/unload, put up tents, decorate, run electricity, trash, lights, cook for the competition, cook for the cooks and a lot more. Everyone is important for the team to be successful. This is also true in our restaurant.
We started in the restaurant business with Mr. Harry's Carnival Foods, in 2010. We brought the BBQ to the carnival. Mr. Harry has moved on, but I am grateful for his dream and courage to start the business. The restaurant is now BBQ ASAP, Always Smoked, Absolutely Perfect. We serve great BBQ and have cotton candy!
We're always working on our recipes and menu items to keep up with the "big "guys, but I'd like to think we can be one of the "big" guys too.
